[D] Roadmap to self-learning AI

Hello, longtime lurker here.
I would just like to gather ideas on how to best structure my learning journey. Like, if you had to do learn it again, assuming zero experience and AI -specific knowledge, how would you proceed?
Some background info:
I have a math degree.
Knowledge in probability and stats.
Python: Have done a number of automation projects at work. I’d put my level at intermediate.
