[D] Why do the conferences and workshops still insist on using "LatinX" when it seems like the Latino community is largely against it?

I'm curious as to the history behind this and why it's being pushed. I've met more than enough Latinos over the years both in the field and outside of it that claim they hate the term, making jokes like about how "only gringX's use that word."
