Splitting extraction by layer
Previously, I looked at some extraction for dried coffee pucks, and some of the shots had a paper filter in between layers. I used this paper filter to cleanly cut the puck and examine coffee extraction by layer. These results align with previous results that show for regular coffee pucks, the top extracts much faster than the bottom. However, for staccato pucks, the bottom (the fine layer) extracts faster than the top. …
