for freelancers: how do you calculate/estimate the hours of a project

At my current work I usually have issues estimating how long it will take to complete a project or at least to have a preliminary version of it, since the field is research, many details can arise. So I wonder how do you make an estimation of the total of hours a project will need. And how you count for the actuall number of ours in case there is an offset.
