When it comes to Chess - Stockfish is powerful because it can search incredibly deep. It doesn't 'look' at a position and 'think' a move is good. Maybe Alphazero is slightly different - as that has the deep search plus the evaluation? I can't remember exactly tbh.
Poker AIs are just very deep brute force approaches too. Getting experience through tonnes of simulations.
