How advanced are the ML techniques used by Data Scientists working in the industry?

I am new to DS. If I pick a random graduate-level textbook on ML, I find that many of the techniques discussed are so much more advanced than what I can possibly learn from Youtube videos, blogs, online courses, etc. How much of these supposedly more sophisticated methods are actually used in DS practice in the industry? Would it be enough if I learn topics that may be covered in an undergraduate course?
