How do you evaluate an Image Augmentation approach in Deep Learning?

I have been working on coming up with an image augmentation strategy for semantic segmentation. I use UNET to evaluate my approach, with the same dataset training for 1000 epochs I get different results (for both the raw dataset and augmented dataset). The dataset is small as well.
