I am struggling a little to figure out what I can do with unstructured text.

What I am familiar with currently ->
Entity Extraction (though have not learned how to fine tune a model to do this)

RAG for LLM Q&A.

LDA/Topic modelling

Clustering with word embeddings.

Besides this I can't quite think of what else I can do with NLP. I'm using it mostly for information retrieval.
