Regression on rice harvest

Hey guys, I am currently building a regression model with which I want to model the influence of climate data (precipitation, temperature, sun) on the rice harvest.

Unfortunately, there is hardly any data available, I have found reliable harvest data (yield, production) only from the year 2000 onwards.
