Searching for the perfect LLM and OCR tools for document processing

I've been dabbling with different LLMs for document processing and need some advice! I'm looking for an appropriate LLM or an OCR and LLM combo for data extraction and labeling.
I'm working with invoices and product tables containing structured data such as: Item descriptions, quantities, prices etc.
My goal is to extract this data and organize it into JSON or CSV format with accurate Field Labels in set sequence.
I've tested GPT-4, Claude 2, and Google's Gemini …
