Seeking advice: Training people detection models on anonymised video footage, anyone with experience/recomendations?

These deployed models will be running at the edge (IoT) so using multiple models is not hugely feasible (eg initial model to blur faces and the second to detect).
These models have more classes than just person detection so using off the shelf data/models is not possible.
Does anyone have experience with the accuracy drops between training on standard video …
