What are good middle of the road industries?

I worked in Tech where it was fast paced and best tech. Learned a ton but burn out was a problem.

I’ve worked in Telecom where pace was slow and tech was terrible. Low stress but very boring.

Are there any industries in the middle? Decent tech with some growth but not overwhelming.
