[Guide] Adding additional classes to YOLOv8 pretrained models without affecting existing weights

I wrote a guide showing how you can add extra classes to a YOLOv8 pretrained model by adding an extra head. Using this trick, the existing weights and thereby the performance on the pretrained classes are preserved while incurring a little overhead for the extra head that is added.
