The search for intellectual stimulation in DS jobs, should I just give up?

I’m an MS student in statistics. My undergrad was in mathematics and statistics. I have done a few data science internships in undergrad. These were analytics jobs, and, frankly, I shared the same sentiment with a lot of people here about them being dull, boring, and not challenging.
