what the largest model deployment you work with?

We all focus on the training side of things and which model is better/faster etc. But when it comes to the deployment in a proper production environment, how do you folks generally go about it? What the most amount of models you're running in deployment?

Most of my projects are small one-offs with 1-2 cameras.
